This is food theatre at its finest with courses which include raw prawns in prawn sauce with potato mousse and fresh truffle, quail meat involtini with quail egg au jus, John Dory with leek cream, truffle, and sage beurre blanc, and Jerusalem artichoke risotto with artichoke confit, apricots and goat cheese.
